Baked Rice Pudding #2


Serves: 4

Ingredients

1/3 cup uncooked rice
2 cups milk
2 egg yolk
2 tablespoons butter
3/4 cup brown sugar, packed
1/2 teaspoon vanilla extract
2 egg whites

Directions:

Wash rice put into double boiler with milk. Cook, stirring often for 1 hour. Just before rice is done, remove from heat add egg yolks, butter and brown sugar. Cool and add vanilla. Whip egg whites until stiff and fold into mixture. Pour into casserole and bake at 350°F for 30 minutes. Serve with cream.
