Peppermint Patties

Ingredients

1 envelope Know unflavored jello
1 tablespoon boiling water
1 cup heavy cream
3 drops peppermint extract
2 tablespoons cream cheese
2 tablespoons unsweetened baking chocolate, melted
1 cup splenda
1/2 teaspoon vanilla extract

Directions:

1. Soften gelatin in 1 cup the boiling water. To 1 tablespoon of gelatin, add all ingredients into a blender and blend well. Chill for 10 minutes and spoon onto parchment paper and freeze. Store in an airtight container.
