Summer Tomato Salad with Brie


Serves: 7

Ingredients

5 medium garden fresh tomatoes, cut into chunks, save juice
1/2 pound brie cheese, rind removed, torn into pieces
1/2 cup fresh basil, snipped into strips with scissors
3 large garlic cloves, minced
1/3 cup olive oil
1/2 teaspoon salt
1/2 pound fresh pasta (linguini, shells, etc.)
1/2 cup freshly grated Parmesan cheese

Directions:

Combine tomatoes and juice, Brie, basil, garlic, olive oil, and salt. Leave at room temperature at least 2 hours. Cook pasta as directed on package. Drain and immediately toss with tomato mixture. Brie should melt. Mix. Sprinkle with parmesan. Add more salt to taste. Serve at room temperature.

Note: Freeze Brie for 20 minutes to remove the rind easily.
