Cucumber Mousse

Ingredients

1 package lime-flavored gelatin
1 cup boiling water
1 teaspoon salt
2 tablespoons vinegar or lemon juice
1 cup sour cream
1/4 cup mayonnaise
1 1/2 cups finely cut, drained cucumbers
3 tablespoons minced green onions and tops
1 tablespoon chopped green pepper

Directions:

Dissolve gelatin in water. Add salt and lemon juice. Cool to room temperature and add sour cream and mayonnaise. Chill until syrupy and fold in cucumber, onions, and green pepper. Chill until firm in 8-inch ring mold. Needs no additional dressing.

Editor's Extra: Pretty to thinly slice 1/4 of an unpeeled cucumber and place on bottom of ring mold or cake pan. Pour mousse over. To add a little color, use red bell pepper in place of green.
