Mild Tomato Aspic Salad

Ingredients

1 small package lemon jello
3/4 cup boiling water
1 cup tomato juice
1 teaspoon lemon juice
1 cup finely chopped celery
1 cup finely chopped green pepper
1/2 cup sliced stuffed olives
1 mayonnaise and hard-cooked egg slices for garnish

Directions:

Dissolve the Jell-O in the boiling water, add juices. Refrigerate until mixture begins to thicken, then add remaining ingredients. Pour into mold or pan. Chill until set. Garnish with egg slices and dabs of mayonnaise.

Variation: For luncheon salad, add 1 1/2 cups cleaned, cooked small shrimp (or two 4 1/2-ounce cans).
