Pineapple Upside Down Cake

Ingredients

3 tablespoons butter or margarine
1 cup brown sugar
large can sliced pineapple, drained
8 maraschino cherries
1 1/2 teaspoons baking powder
1 pinch salt
3 eggs
1 1/2 cups sugar
1/2 cup water (or juice from pineapple)
1 teaspoon vanilla extract
1 1/2 cups flour

Directions:

Put butter and brown sugar in a (10-inch) iron frying pan. Let simmer a couple of minutes and add sliced pineapple. Place a maraschino cherry in center of each pineapple slice. Remove from heat. Make a batter of the remaining ingredients and pour over pineapple slices. Heat oven to 400°. Put skillet in oven for 10 minutes. Reduce heat to 350° and bake an additional 50 minutes or until cake is done. Turn out of pan on a large platter. Serve plain or with whipped cream.
