Spinach Pie

Ingredients

1 (10-ounce) package frozen leaf spinach
2 carrots, grated
1/4 cup liquid egg substitute
1 tablespoon polyunsaturated oil
1 medium potato, grated and drained of liquid
1/2 small onion
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
3 cups cornflakes
2 tablespoons cold polyunsaturated margarine

Directions:

Mix the spinach with all the ingredients except for the cornflakes and margarine.

Place the cornflakes in a plastic baggy and crush. Pour the crushed flakes into a bowl and blend in the cold margarine. Coat the bottom of a 9-inch pie pan with the cornflakes and bake for 10 minutes at 350 degrees and cool. Fill the pie with the spinach mixture, sprinkle with additional cornflakes and bake for 30 minutes at 375 degrees.
