Scalloped Potatoes

Ingredients

2 large potatoes, peeled and thinly sliced
1 tablespoon polyunsaturated oil
2 tablespoons flour or 1 1/2 tablespoons rice flour
1/4 teaspoon kosher salt
1/2 cup concentrated soy protein infant formula
1/2 cup water
2 tablespoons low fat asiago cheese

Directions:

Blend the oil, flour and salt and cook over a low heat, slowly blending in the infant formula and water to avoid lumps. Cook until the sauce is smooth and thickened.

Place 1/3 of the potatoes in a casserole and pour 1/3 of the sauce over them. Add a second layer of potatoes and another 1/3 of the sauce. Finish with a third layer of potatoes and the rest of the sauce. Sprinkle the cheese and bake covered at 350 degrees for one hour. Uncover the potatoes and continue baking until the potatoes are browned.
