Potato Pancakes

Ingredients

5 large potatoes, peeled and grated and drained, liquid reserved
1/2 cup liquid egg substitute
1 teaspoon kosher salt
1 tablespoon flour
1 tablespoon minced onion
1/2 teaspoon baking powder
2 tablespoons polyunsaturated oil
applesauce

Directions:

Mix the drained potatoes, egg substitute, salt, flour, onion and baking powder. If the consistency is too thick, add some of the reserved potato liquid.

Drop the mixture by the tablespoonful into the oil in a hot skillet and brown well on both sides. Drain on a paper towel to remove excess oil. Serve with applesauce.
