Roasted Beets


Serves: 6

Ingredients

6 large beets
1 tablespoon polyunsaturated oil

Directions:

Wash the beets thoroughly and dry them. Rub each beet with the oil and wrap them separately in aluminum foil. Roast for one hour at 350 degrees and cool.

When the beets are cool enough to handle, open the foil and rub each one with a paper towel to remove the skin. Slice the beets and serve warm or cut into ½ inch cubes to add to salads.
