Stuffed Manicotti

Ingredients

1 pound ground beef
1 (8-ounce) package manicotti shell
1 (26-ounce) jar spaghetti sauce, divided
1 (16-ounce) container cottage cheese
2 cups grated mozzarella cheese, divided
1/2 cup grated Parmesan cheese
1 egg, beaten
1 teaspoon dried oregano

Directions:

Preheat oven to 350 degrees.

In a frying pan, brown ground beef until no longer pink. Drain if necessary. Allow meat to cool.

Cook pasta according to package directions; drain and set noodles aside. Pour approximately 1 cup spaghetti sauce into a greased 9 x 13-inch pan. Spread the sauce to cover the bottom of the pan. Stir cottage cheese, 1 cup mozzarella cheese, Parmesan cheese, egg, and oregano into warm meat. Stuff manicotti with meat mixture. Lay stuffed pasta in the pan. Spread remaining spaghetti sauce over stuffed shells. Sprinkle cheese over top. Cover with aluminum foil and bake 40 minutes. Uncover and bake an additional 5–10 minutes.

*Use a cake decorating bag or a plastic sandwich bag with the corner cut off to pipe the manicotti filling into the pasta.
