Kid's Favorite Lasagna

Ingredients

1 pound ground beef
1 1/2 teaspoons Italian seasoning
1 (16-ounce) container cottage cheese
1 egg, beaten
2 cups grated mozzarella cheese, divided
3/4 cup water, divided
2 (26-ounce) jars spaghetti sauce, any variety
1 (12-ounce) package oven ready lasagna noodles, uncooked

Directions:

Preheat oven to 350 degrees.

In a frying pan, brown ground beef until no longer pink. Season with Italian seasoning.

In a bowl, combine cottage cheese, egg, and 1 cup mozzarella cheese.

Add 1/2 cup water and all but 1 cup of spaghetti sauce to beef. Spread reserved spaghetti sauce into bottom of a greased 9 x 13-inch pan. Layer 5–6 lasagna noodles over sauce, overlapping or breaking to fit, if necessary. Spread half the cheese mixture over noodles. Spoon a third of the beef mixture over cheese layer. Repeat layers once. Add one more layer of 5–6 noodles and spoon remaining beef mixture over top. Drizzle remaining water over top. Cover with aluminum foil and bake 50 minutes. Uncover and sprinkle remaining cheese over top. Bake, uncovered, 5 minutes more. Let stand 5 minutes before serving.

VARIATION: 1 package (3.5 ounces) pepperoni can be added to the layers.
