Strawberry Parfaits

Ingredients

1 pint fresh strawberries
1/2 envelope (1 1/2 teaspoons) unflavored gelatin
2 tablespoons cold water
2 cups buttermilk
3/4 cup sugar
1/2 teaspoon vanilla extract
1-2 drop red food color
2 egg whites
1/3 cup sugar
1 pint fresh strawberries

Directions:

Push 1-pint strawberries through food mill or sieve to make puree. Sprinkle gelatin over cold water to soften heat over hot water till dissolved. Combine buttermilk, 3/4 cup sugar, strawberry puree, vanilla extract, food coloring, and gelatin mix well. Pour into freezer bags and freeze until firm.

Beat egg whites to soft peaks. Gradually add 1/3 cup sugar, beating to stiff peaks. Break frozen strawberry mixture into chunks turn into chilled bowl. Beat smooth. Fold whites into frozen mixture. Return to freezer bags and freeze until firm.

When ready to serve, slice remaining 1 pint strawberries sweeten to taste. Spoon strawberry sherbet mixture and berries alternately into parfait glasses. Serve at once.
