Marble Squares with Fudge Sauce

Ingredients

3/4 cup sugar
1/2 cup butter or margarine
1 1/2 teaspoons vanilla extract
2 eggs
2/3 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 (1 ounce) square unsweetened baking chocolate, melted
vanilla ice cream
Fudge Sauce:
3/4 cup sugar
3 tablespoons baking cocoa
dash salt
2 tablespoons water
1 (5-ounce) can evaporated milk
2 tablespoons butter or margarine
1 teaspoon vanilla extract

Directions:

Cream sugar with butter add vanilla. Add eggs, beating just until blended. Stir together flour, baking powder, and salt. Stir into creamed mixture. Spoon half of the batter into another bowl stir melted chocolate into remaining batter.

Drop chocolate batter, checkerboard-fashion, from a tablespoon into a greased 8 x 8 x 2-inch pan. Fill in the spaces with the light batter. Zigzag batter with spatula to marble, but don't over mix. Bake at 350° F until done, 25-30 minutes cool. Wrap, label, and freeze.

To serve, thaw cake. Cut into squares. Top each square with a scoop of vanilla ice cream. Drizzle with hot or cold Fudge Sauce.

Fudge Sauce:
In a saucepan, combine sugar, cocoa, and salt. Blend in water, stirring to dissolve cocoa. Add milk bring to a boil. Boil gently until thick, about 3-4 minutes, stirring often. Remove from heat add butter and vanilla. Cover and chill. If desired, heat before serving for hot fudge sauce. Makes 1 cup.
