Pesto Crostini

1/2 loaf whole-wheat baguette
5 plum tomatoes
1 cup shredded part-skim mozzarella cheese
3 tablespoons prepared pesto


Slice baguette into 20 thin, diagonal slices. Slice tomatoes lengthwise into 4 slices. Place bread slices on ungreased nonstick baking pan. Put 1 teaspoon cheese, 1 slice tomato, then another teaspoon cheese on top. Bake at 400° for 8 minutes or until bread is toasted and cheese melted. Top each crostini with a dab of pesto sauce. Serve warm.

Fun Fact: Partygoers seem to never tire of bread appetizers. Whether stuffed, crisped, hot baked, or sandwiched, they’re always crowd pleasers.
