Broccoli Cornbread Mini Muffins

Ingredients

1 (10-ounce) package frozen chopped broccoli, thawed
1 cup shredded Cheddar cheese
1 (8 1/2-ounce) package corn muffin mix
1/3 cup finely chopped onion
2 eggs
1 stick butter, melted

Directions:

Combine broccoli, cheese, corn muffin mix, and onion in large bowl. Mix eggs and butter well; add to broccoli mixture, stirring just to moisten. Spoon into lightly greased miniature muffin pans, filling 3/4 full.

Bake at 325° for 13–20 minutes or until browned. Let stand 2–3 minutes before removing from pans.
