Grilled Mozza-Roma Bites

1 loaf crusty Italian bread, cut into 16 slices
1/3 cup prepared pesto
16 fresh basil leaves
8 slices mozzarella cheese
24 thin slices roma tomatoes
olive oil


Spread half the bread slices with pesto. Top each slice with 2 basil leaves, 1 slice cheese, and 3 slices tomatoes; top with remaining bread slices.

Brush outsides of sandwiches lightly with olive oil. Grill sandwiches in indoor grill pan or skillet (both sides) about 5 minutes or till lightly browned and cheese is melted. Cut sandwiches into 4 pieces. Best served warm.
