Vidalia Onion Vinaigrette

Ingredients

1 Vidalia onion, quartered
1/3 cup red wine vinegar
3/4 cup sugar
1 tablespoon dry mustard
1 teaspoon salt
1 cup vegetable or olive oil
1 1/2 teaspoons poppyseed

Directions:

Process onion in a food processor or blender until finely minced. Add vinegar, sugar, mustard, and salt; process until well-mixed. With processor running, add oil in a slow, steady stream. Stir in poppyseed.
