Greek Salad Dressing

Ingredients

1/2 cup red wine vinegar
2 teaspoons minced garlic
2 teaspoons minced shallots
2 teaspoons finely chopped fresh oregano
2 teaspoons fresh snipped basil
1 teaspoon whole-grain mustard
salt and freshly ground black pepper to taste
1 1/2 cups extra virgin olive oil

Directions:

Whisk all ingredients except oil in a medium bowl. Slowly pour in olive oil while whisking, until emulsed. (You can do this in a processor or blender.)
