Lebster Salad Roll


Serves: 5

Yield: 4 - 5lobster rools

Ingredients

2 cups coarsely chopped cooked lobster
2/3 cup diced celery
1/4 cup mayonnaise, or to taste
2 teaspoons finely diced onion
1 teaspoon Old Bay Seasoning
4 - 5 split toasted hoagie rolls (New England-style, if available)

Directions:

Have the seafood department in your supermarket steam 2 lobsters. Remove meat; chop and chill. Combine all ingredients. Arrange in buns.

Editor's Extra:
You can make this stretch with 2 finely chopped boiled eggs.
