Hash Brown Oyster Chowder

Ingredients

1 1/2 cups finely chopped onions
1/8 teaspoon crushed dried thyme
3 tablespoons butter
2 cups frozen shredded hash brown potatoes
3 cups half and half
salt and pepper to taste
1 pint raw oysters, undrained
2 tablespoons chopped fresh parsley

Directions:

Sauté onions and thyme in butter in a large saucepan over medium heat, stirring occasionally. Add hash browns and cook till tender, about 15 minutes. Add half-and-half, salt and pepper, and bring just to boiling, then add oysters and heat till oysters curl. Sprinkle with parsley and serve over oyster crackers, if desired.
