Cheesy Corn & Crab Chowder

Ingredients

1 1/4 cups frozen whole-kernel corn
1 cup chicken broth
1/2 cup sliced green onions
1/2 cup chopped green bell pepper
3/4 teaspoon crushed dried basil
1/2 teaspoon white pepper
3 cups milk
3 tablespoons cornstarch
1 - 2 cups cooked fresh crab meat
1 1/2 cups shredded Swiss cheese

Directions:

In a large saucepan, combine corn, broth, green onions, bell pepper, basil, and white pepper. Bring to a boil; reduce heat. Simmer, covered, 5 minutes. Stir together milk and cornstarch. Stir into hot mixture. Cook and stir until thickened and bubbly. Stir in crabmeat and cheese; heat and stir until cheese melts.

Editor’s Extra:
Heavy cream or half-and-half is sometimes substituted for some or all of the milk to make the chowder even thicker.
