Ahoy Mate Oyster Chowder

Ingredients

3/4 cup chopped onion
2 tablespoons butter
3 tablespoons all-purpose flour
1 (14 1/2-ounce) can chicken broth
2 red potatoes, peeled, cubed
2 cups half and half
1 (15-ounce) can cream-style corn
1 (7-ounce) can Niblets corn
2 (8-ounce) cans oysters, drained
2 tablespoons chopped fresh parsley

Directions:

Sauté onion in melted butter in dutch oven, stirring till soft. Add flour; cook 1 minute, stirring constantly. Stir in chicken broth and potatoes. Cover; cook 10–15 minutes or until potatoes are just tender, stirring occasionally. Stir in half-and-half, creamed corn, and niblets. Cook uncovered 5–6 minutes or until mixture is hot, stirring occasionally. Stir in oysters and parsley; cook 5–6 minutes or just until oysters are thoroughly heated.
