Frances’ Fancy Breakfast

Ingredients

3 English muffins, split in half
1/4 cup butter
2 green onions (or 1 small onion), chopped
1 small green pepper, chopped
6 - 8 large fresh (or canned) mushrooms, sliced
4 eggs, beaten with a small amount of milk
salt and pepper to taste
6 slices Canadian bacon
1 (10 3/4-ounce) can cream of mushroom soup, undiluted
1 cup grated Cheddar cheese

Directions:

Lightly butter and toast English muffin halves. Sauté in butter the onions, green pepper, and mushrooms until softened. Add beaten eggs, season, and scramble. Top each muffin half with a slice of Canadian bacon. Mound some of the egg mixture on the bacon and then place a tablespoon of mushroom soup on top. Add grated cheese on top of the soup and heat under the broiler until the cheese is melted and browned. This makes a delightful breakfast or brunch when served with spiced apple rings or fresh fruit.
