Banana Nut Bread

Ingredients

1/2 cup granulated sugar
2 tablespoons brown sugar
5 tablespoons margarine, softened
1 1/3 cups mashed ripe bananas (3 or 4 bananas)
1 egg
2 egg whites
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup chopped walnuts

Directions:

Preheat oven to 375°. Spray large loaf pan with nonstick cooking spray; set aside. Beat sugars and margarine in large bowl with electric mixer until light and fluffy. Add bananas, egg, and egg whites. Sift together flour, baking soda, and salt in medium bowl; add to banana mixture. Stir in walnuts. Pour into prepared loaf pan. Bake 1 hour or until wooden pick inserted in center comes out clean. Remove from pan. Cool on wire rack 10 minutes. Serve warm or cool completely.
