Southern Utah Dutch Oven Potatoes

Ingredients

1 pound ground sausage
2 tablespoons oils
1 pound bacon, chopped
6 yellow onions, chopped
sliced potato (enough to fill DO to the top)
1/2 green bell pepper, chopped (optional)
salt, pepper or Mrs. Dash

Directions:

Heat the Dutch oven on a gas hot plate or use 6-8 briquets on the bottom. Put a little oil in the bottom of the DO to keep sausage from sticking. Brown and crumble sausage while cooking. After the meat is browned, pour off the grease and add the chopped bacon. When bacon is browned, pour off some of the grease, leaving a little to cook the onion. Dump in the onion, mix all together and cook until onions are clear. Fill the DO to the top with sliced potatoes and chopped green pepper. Mix all together and cook until potatoes are done. Season with salt and pepper, or Mrs. Dash if you wish to reduce salt. Note: It is better to leave the lid off the DO so the steam will escape otherwise, the potatoes will be too soft and mushy.
