Cabbage & Bacon Mashed Potatoes


Serves: 8

Ingredients

4 cups leftover mashed potatoes
2 pounds cabbage, shredded or diced
4 slices thick sliced bacon
1/2 cup water

Directions:

Cook bacon until crisp and remove from Dutch oven or skillet. Fry cabbage in bacon grease for about five minutes. Add water and simmer until the liquid is reduced by half. Stir in leftover mashed potatoes and crumble bacon into the mixture. Bake for 15-20 minutes with 5-6 briquets underneath and 14-16 on top.
