Turkey and Shrimp Won Tons

Ingredients

1/2 pound ground turkey
4 ounces raw shrimp, shelled and deveined, rinsed and finely chopped
1/4 cup water chestnut, finely chopped
2 tablespoons soy sauce
1 tablespoon dry white wine
1 teaspoon fresh ginger, grated
1/2 teaspoon kosher salt
1/4 teaspoon white pepper
2 packages wonton wrappers, approximately 50 to 60
1 tablespoon egg, beaten

Directions:

In a bowl, mix turkey, shrimp, chestnuts, soy sauce, wine, ginger, salt, and pepper until well blended. Place one wrapper on a flat surface and cover the remaining wrappers with a damp towel or plastic wrap. Place about 1 teaspoon of the mixture near the lower corner of the wrapper. Fold the bottom corner over the filling and roll to tuck the corner under the filling. Moisten the 2 corners on the side of the filling with the egg. Join the ends together and pinch to seal. The last corner should point up from the back of the roll of filling. Place on a parchment lined cookie sheet. Repeat with remaining filling and wrappers, covering filled won tons with another damp towel to prevent drying out. Fry in oil or cook in Won Ton Soup.
