Basic Pizza Dough

Ingredients

2 teaspoons honey
2 1/4 teaspoons active dry yeast (1 package)
3/4 cup warm water (100° to 110°F)
2 1/4 cups flour, divided
1/2 teaspoon kosher salt
cooking spray
2 tablespoons stone-ground yellow cornmeal

Directions:

In a large bowl, dissolve honey and yeast in water. Let stand 5 minutes or until bubbly. Add 2 cups. Flour and salt to the yeast mixture stir until a soft dough forms. Turn dough out on a floured board and knead until smooth and elastic, about 6 minutes add enough of the remaining flour to prevent the dough from sticking to your hands. (dough will feel slightly sticky) Place dough in a large bowl coated with oil turning dough to coat with oil. Cover and let rise in a warm place (85°F) free from drafts for about 30 minutes or until doubled in size. Roll dough into a 12-inch circle about 1/4-inch thick on a lightly floured board. Place the dough on a 14-inch Dutch oven lid, oiled and lightly coated with cornmeal. Lightly spray surface with cooking spray and cover with Dutch oven and let rest 15 minutes. Remove Dutch oven and prepare your favorite pizza with toppings of your choice.
