Zucchini Bread Or Muffins

Ingredients

1/2 cup raisins
1/4 cup frozen apple juice concentrate
1/4 cup egg substitute
1/4 cup corn oil
1 ripe banana, sliced
1 teaspoon vanilla extract
1 cup whole wheat flour
1/2 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup zucchini, fresh or frozen, shredded

Directions:

1. Heat raisins in apple juice until raisins are soft, about 3 minutes. (Takes about a minute in the microwave.)

2. Pour raisins and juice into blender and puree.

3. Add egg substitute, oil, banana, and vanilla and blend.

4. Sift dry ingredients into a large bowl.

5. Stir in blender ingredients and zucchini.

6. Spray a loaf pan or 12 muffin cups with nonstick vegetable spray. Spoon in batter.

7. Bake at 350°F for about 50 minutes for load or 25 minutes for muffins.
