Whole-Wheat And Bran Bread

Ingredients

2 cups whole wheat flour
1 cup bran
1 teaspoon baking soda
1 teaspoon cream of tartar
1/2 teaspoon salt (optional)
1 1/4 cups buttermilk or whey from making yogurt cheese (see APPETIZERS)
1 tablespoon corn oil

Directions:

1. Spray round baking dish with nonstick vegetable cooking spray.

2. In a large bowl, mix the flour, bran, baking soda, cream of tarter and salt.

3. Make a well in the middle and pour in the buttermilk and oil. Mix quickly with a rubber scraper until flour disappears, folding dough with a kneading motion.

4. Shape a round loaf slightly domed in the middle, about 6 1/2 inch in diameter. Place in baking dish. With a knife, cut a cross on the top from one side of the loaf to the other (to help prevent bread from cracking).

5. Bake at 425°F for 25 minutes. Lower the heat to 350°F for 10 minutes longer or turn heat off and finish cooking on heat stored in oven. Bread is done if it sounds hollow when tapped.
