Tofu Waffles

Ingredients

WAFFLES:
1 cup biscuit mix
2 tablespoons powdered buttermilk
3/4 cup cold water
1/4 cup crumbled tofu
1 tablespoon vegetable oil

BLUEBERRY SAUCE:
2 cups blueberries
3/4 cup water
12 packets artificial sweetener
1 tablespoon cornstarch
2 teaspoons lemon juice

Directions:

BLUEBERRY SAUCE:
1. In saucepan, combine all ingredients unless you are using aspartame, which is added later. Bring ingredients to boil over medium heat, stirring until sauce is clear. Remove from heat and cool a little.

2. Stir in aspartame if you are using it. Serve warm.

WAFFLES:
1. Spray waffle baker with nonstick vegetable cooking spray. Preheat.

2. Combine all ingredients and blend well. Use a blender for rich, smooth batter. Pour batter onto heated waffle baker and bake until crisp. Serve with blueberry sauce or any of the fruit sauces in the DESSERT section of this book.
