Good fresh fish can be expensive. In deciding what to buy, keep in mind that only about half of a whole fish may be edible, while fillets are entirely edible. Depending on price per pound, fillets may turn out to be the better buy. Really fresh fish is worth the cost since fish begins to deteriorate as soon as it is caught. A strong fishy or ammonia odor is the unmistakable sign of fish that has been kept too long. About five days is the maximum refrigeration time for most fresh fish, including the time it has spent in the grocer's display case.
