Peeling Tomatoes and Beets

Directions:

To peel a tomato easily, spear it securely on a cooking fork with an insulated handle. Immerse the tomato in boiling water for a minute or two, then transfer to ice water. The skin will slip off easily. This can also be done over a gas flame. Slowly rotate the tomato on a fork over the flame until the skin pops. Whole beets can be skinned by plunging the hot cooked beets into ice water and pulling off the skins.
