Liver Pate

Serves: 20

   1 pound pork liver
   3/4 pound pork sausages
   1 onion
   2 tablespoons flour
   2 tablespoons butter
   2 cups milk
   3/4 teaspoon black pepper
   1 1/2 teaspoons salt
   1/2 teaspoon allspice
   1/4 teaspoon cloves
   2 eggs
   2 cups pickled beets


Preheat oven to 350 degrees F. Put liver, pork sausage, and onions through meat grinder two times. Set aside while you prepare white sauce: In a saucepan, melt butter; stir in flour, then milk, and cook, stirring constantly, till thickened. Add white sauce to ground liver mixture and mix well. Stir in seasonings and eggs and mix well. Pour mixture into greased loaf pan. Place loaf pan in a shallow pan of water and bake 1 1/4 hours. Cool. Spread on bread or crackers and garnish with piece of pickled beet.
