Chicken Almond Puffs

Serves: 48

   1/2 cup butter
   1 cup chicken broth
   1 cup flour
   1/4 teaspoon salt
   4 eggs
   1 cup chicken cooked and finely diced
   3 tablespoons almonds finely chopped


Preheat oven to 400 degrees F. In saucepan on top of stove, heat butter (or margarine) and chicken stock. When butter is melted, add flour and salt, and stir vigorously with wooden spoon till mixture forms ball. Remove from heat. Beat eggs in, one at a time, and continue beating till dough thickens. Stir in chicken and almonds. Drop by teaspoon onto greased baking sheet. Bake 15 minutes or till brown. Makes 4 dozen cocktail puffs.
