Chuckwagon Beef Hoagies


Serves: 4

Ingredients

1 tablespoon butter or margarine
1 onion medium, sliced in rings
1 (8-ounce) can tomato sauce
1/2 cup barbecue sauce
1 pound roast beef thin sliced from the deli
4 to 6 hoagies or kaiser rolls, split

Directions:

In a large skillet over medium heat, melt butter. Sauté onion rings for 3 to 4 minutes or until crisp-tender. Stir in tomato sauce and barbecue sauce. Simmer for 3 to 4 minutes. Add roast beef and simmer for 2 to 3 minutes or until heated through.

Butter and toast rolls if desired. Spoon meat onto rolls and serve.

To Microwave: Cook onion Stir in tomato sauce and barbecue sauce. Cover with waxed paper. Microwave at 100% power for 2 to 3 minutes or until boiling. Stir in meat. Cover with foil and let stand for 3 to 4 minutes or until meat is warm.
