Stuffed Peppers with Shrimp and Rice

Ingredients

6 medium bell peppers
1/2 cup rice
1/2 cup butter or margarine
1 pound small or medium shrimp, peeled
1 large onion, chopped
1 clove garlic, chopped
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon pepper
1 (20-ounce) can diced tomato
1 cup Pepperidge Farm seasoned dressing

Directions:

Prepare bell peppers for stuffing by cutting bottom out and cleaning seeds from inside. Boil peppers 5 minutes. Remove and drain. Cook rice; set aside. Melt butter or margarine in saucepan. Place shrimp, onion, garlic, cayenne pepper, salt, and pepper in pan of melted butter; cook for 5 minutes. Pour tomatoes in same pan and cook 5 more minutes. Remove from heat and mix cooked rice with all ingredients in same pan.

Place peppers in baking dish. Fill each with rice mixture, then top with seasoned dressing. Cover dish and place in 350°oven 30 minutes.


Fun Fact: Beauvoir (circa 1848-1851), located in Biloxi, Mississippi, is the retirement home of Jefferson Davis, President of the Confederate States of America. The compound consisted of approximately 608 acres when Davis lived there (today, the site is approximately 52 acres in size). The name “Beauvoir” means “beautiful to view.” The home faces the Gulf of Mexico and Spanish moss hangs from many of the large old trees on the property.

Beauvoir and the Jefferson Davis Presidential Library suffered heavy damage from Hurricane Katrina on August 29, 2005. These two structures can and will be restored given time and funding. However, the Library pavilion (where Jefferson Davis penned “The Rise and Fall of the Confederate Government”), the Hayes cottage, Soldier’s Home Barracks replica, Confederate Soldier’s Museum, Giftshop, and director’s home were totally destroyed. Replicas of those buildings totally destroyed will be built after the restoration of Beauvoir House and Presidential Library are complete. Prior to Katrina, the Jefferson Davis Presidential Library maintained a collection of 12,000 books on United States history, southern history, and history of the American Civil War. The library also maintained collections of photographs, personal letters, manuscripts, envelopes, postcards, newspaper clippings, records of Confederate heritage organizations such as the United Confederate Veterans and the Sons of Confederate Veterans, and records from the Veterans home that once was present on the grounds. Many of these records survived, and the salvageability of the collections stands at about sixty percent.
