Stir-Fry Chicken, Broccoli, and Rice

Ingredients

4 tablespoons corn oil, divided
2 cups broccoli florets
1 cup carrot, cut into matchsticks
1/2 cup coarsely chopped walnuts
1 garlic powder
4 chicken breasts halves, deboned and cut into strips
2 tablespoons soy sauce
1 teaspoon ginger (optional)
1/2 teaspoon sugar
2 cups chicken broth
1/4 cup sliced green onion
1 cup Uncle Ben's Converted Rice

Directions:

Put 2 tablespoons corn oil in skillet or wok over medium heat. Add broccoli, carrots, walnuts, and garlic powder; stir-fry for 2 minutes. Remove vegetables. Add remaining 2 tablespoons corn oil; add chicken. Stir-fry until chicken turns white. Add soy sauce, ginger, and sugar, and stir-fry 2 more minutes.

Take out chicken, and put into bowl with vegetables. Add broth and green onions to skillet, and bring to boil. Stir in rice and cover tightly. Simmer 20 minutes. Remove from heat and stir in vegetables. Let stand until liquid is absorbed.
