Red Beans and Rice

Ingredients

2 pounds red kidney beans
2 cups chopped onions
1/2 cup chopped green bell pepper
1 1/2 cloves garlic, mashed
2 tablespoons chopped parsley
1 pound cured ham, cubed
1 pound smoked sausage, sliced
1 ham bone (optional)
1 tablespoon salt
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper
2 bay leaves
1/2 teaspoon thyme
2 quarts water
2 quarts raw rice, cooked

Directions:

Soak beans overnight in water to cover.

Add remaining ingredients, except rice. Cook on low heat 3 hours. Stir the mixture only once every half hour. Remove bay leaves. Serve over fluffy rice.
