Snowball Cake

Ingredients

1 tablespoon unflavored gelatin
1/4 cup cold water
1 cup boiling water
1 cup sugar
1/8 teaspoon salt
1 cup orange juice
juice of 1 lemon
1 pint whipping cream, divided
1 angel food cake, torn
Optional: 1 (3-1/2 ounce) can sweetened flaked coconut

Directions:

In a large bowl, soften gelatin in cold water. Stir in boiling water to dissolve gelatin. Add sugar and salt; stir well. Blend in orange and lemon juices; mix well. Chill mixture until firm. Spray a 4-quart round bowl with non-stick vegetable spray; set aside. With an electric mixer on medium speed, whip one cup cream until soft peaks form; fold into gelatin mixture. In the sprayed bowl, layer 1/3 gelatin mixture and half of cake pieces. Repeat layering, ending with gelatin mixture on top. Refrigerate overnight. Turn chilled cake out onto a serving platter. Whip remaining cream until stiff peaks form, adding sugar to taste. Frost the top of the cake with whipped cream; sprinkle with coconut, if desired.


Hot glue together 4-inch long cinnamon sticks to make fragrant coasters for mugs of tea or cocoa.
