Date Pudding

Ingredients

1 cup sugar
1 cup chopped dates
1 cup bread crumbs
1 teaspoon baking powder
1 egg, beaten
2 tablespoons butter, melted
1 cup milk
Optional: 1-1/2 cups mini marshmallows

Directions:

Mix together sugar, dates, bread crumbs and baking powder in a large bowl. Stir in egg, butter and milk, blending well. Pour mixture into a lightly greased 1-1/2 quart casserole dish. Bake at 325 degrees for one hour, or until top looks dry. If desired, add marshmallows over top of pudding and return to oven for 5 minutes, or until melted.


Whip up cake-mix cookies when it’s time for a classroom party or holiday bazaar. Blend together a 9-ounce package of devil’s food cake mix with one beaten egg, one tablespoon melted shortening, 2 tablespoons water and 1/2 cup chopped nuts. Drop by teaspoonfuls onto a greased baking sheet and bake at 350 degrees for 10 minutes. Makes 2 dozen.
