Raisin Spice Cake

Ingredients

1 (16-ounce) package raisins
2 cups brown sugar, packed
2 eggs, beaten
1/4 cup shortening
1/4 cup margarine, softened
1 cup buttermilk, divided
1 teaspoon baking soda
2 cups all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon cloves

Directions:

Place raisins in a medium saucepan; add water to cover. Simmer over medium heat for 5 minutes. Drain and set aside. Blend brown sugar, eggs, shortening and margarine together in a large bowl. Add 1/2 cup buttermilk; stir well and set aside. Dissolve baking soda in remaining buttermilk. Thoroughly combine flour, brown sugar mixture, baking soda mixture, cinnamon and cloves. Add raisins and stir. Pour batter into 2 greased and floured 9" round baking pans. Bake at 350 degrees for 35 to 40 minutes, or until center tests done.
