Mom’s Holiday Date Balls

Ingredients

1 cup butter
1 cup sugar
1/4 teaspoon salt
1 (8-ounce) package chopped dates
1 1/2 cups chopped pecans
2 cups crispy rice cereal
1 teaspoon vanilla or rum extract
Garnish: powdered sugar

Directions:

Melt butter in a medium saucepan over medium heat. Add sugar, salt and dates. Cook, stirring constantly, until mixture is smooth and thick. Remove from heat and stir in pecans, cereal and extract. Set mixture aside to cool. When cool, form into one-inch balls and roll in powdered sugar. Store in an airtight container.
