Date Crispies

Ingredients

3/4 cup plus 1-1/3 tablespoons butter
1 cup sugar
1 (8-ounce) package chopped dates
2 eggs, beaten
1 cup chopped pecans or walnuts
2 cups crispy rice cereal
1 cup sweetened flaked coconut

Directions:

Melt butter in a large skillet over medium-low heat. Combine sugar and dates; add to skillet, stirring often. Cook until mixture starts to thicken. Stir in eggs, blending quickly to keep them from cooking. Stir until well blended. Increase heat to medium-high. Boil mixture, stirring constantly, for 1-1/2 to 2 minutes. Remove from heat. Blend in nuts and cereal. Cool until comfortable to handle. Form into one-inch balls; roll in coconut. Cool on wax paper.
