Farmhouse Squash Bake

Ingredients

3 pounds yellow squash, sliced
1 onion, chopped
1/4 cup butter
2 tablespoons all-purpose flour
1 (12-ounce) can evaporated milk
1/2 pound American cheese, diced
1 cup potato chip, crushed

Directions:

Combine squash and onion in a stockpot of salted water. Simmer over medium-low heat until tender, 5 to 10 minutes. Drain and place in a greased 2-quart casserole dish; set aside. In a saucepan over medium heat, melt butter. Whisk in flour, a little at a time; add milk gradually. Stir in cheese and simmer over low heat until cheese melts. Pour sauce over squash mixture; sprinkle top with potato chips. Bake, uncovered at 350 for 30 minutes.


A whimsical snowman with apple eyes, a pine cone nose, greenery for eyebrows and a mustache (u-shaped bobby pins hold greenery in place), is sure to give your neighbors a smile!
