Arugula con Gamberetti

Ingredients

6 tablespoons olive oil
3 tablespoons balsamic vinegar
salt and pepper to taste
1 pound cooked baby shrimp without shells
4 to 6 cups baby arugula

Directions:

Whisk together the oil, vinegar, salt, and pepper. Add shrimp, coat well, and marinate for 30 minutes. Add arugula to shrimp and toss well. Season to taste with salt and pepper. Serve family style on a large, fl at dish.
