1-2-3 Chicken Salad

Ingredients

1 pound chicken breast
3 tablespoons canola oil
salt and pepper to taste
GARLIC AIOLI DRESSING
5 cloves garlic minced
3 egg yolk
1 teaspoon Dijon style mustard
1 cup canola oil
1/2 lemon juiced
SALAD
1 (2-pound) package mesclun
1/2 cup sun dried tomato reconstituted and cut into 1/4 inch strips
1/3 cup thinly sliced bermuda onion
10 fresh basil leaves
1 tablespoon chopped Italian parsley
1/4 cup extra virgin olive oil

Directions:

For the dressing, whisk together the garlic, egg yolks, and mustard. In a slow stream, whisk in the oil. (Must be slow to prevent dressing from separating.) Add the lemon juice and blend well. Set aside.

Lightly coat chicken breasts with oil and season with salt and pepper. Grill over medium-high heat for 3 minutes on each side, or until internal temperature reaches 160 degrees.

When cooked, cut the breast into 1?2-inch strips.

Toss all salad ingredients together. Divide salad and chicken on plates and drizzle with the dressing.
