Sweet Potatoes with Cheese (Batata-doce com queijo)

Ingredients

4 medium to large fresh artichokes
2 tablespoons cooking oils
1/2 finely chopped onion
1 cup sliced mushrooms
1 cup chopped cooked chicken
2 chopped boiled eggs
2 tablespoons cilantro
1/2 teaspoon oregano
2 tablespoons sliced green olives
1/2 cup bread crumbs
1/4 cup freshly grated Parmesan cheese
1/2 cup butter

Directions:

Italian influence. This is one of my favorite Brazilian recipes!

Cut off the stem and top 1/2 inch of the artichokes. Boil until tender, being careful not to overcook. Remove from the water and cool. Spread the leaves enough to reach in and remove the hair from the center of the artichoke. Place the cleaned artichokes into a baking dish.

In a heavy frying pan heat cooking oil. Brown onion and mushrooms. Add chicken pieces, boiled eggs, cilantro, oregano, and green olives. Stuff the artichokes with the mixture. Mix the bread crumbs and Parmesan cheese and cover the artichokes. Add melted butter. Bake in a hot oven—375 degrees for about 15 minutes to dry a little and serve hot.
