Rice Pudding


Serves: 8

Ingredients

2 cups rice
4 cups water
lemon zest
2 quarts milk
2 cups sugar
1 tablespoon butter
8 egg yolk
1/4 teaspoon salt
cinnamon

Directions:

Cook rice in water with a piece of lemon rind. Bring to a boil and then turn down. When the water disappears, remove the lemon rind.

Add milk, sugar, butter. Stir occasionally. When creamy remove from heat.

Beat egg yolks and add the salt. Add 1/2 cup of the rice mixture to the eggs and mix then add the egg mixture to the rest of the rice.

Cool until thick and creamy.

Pour into a beautiful serving dish and sprinkle with cinnamon.

Serve cold.
